Some powerful chinese families control most of the production of this precious culinary ingredient, nevertheless smaller local enterprises succeed in remaining independent. In April 1997 I was present during the boiling process of the vanilla in a remote village in the region of Sambava. You cannot imagine the wonderful smell floating over the villages during this time of the year. |
