Sambava is the centre of the vanilla in Madagascar, supposed to produce the best quality worldwide.
Some powerful chinese families control most of the production of this precious culinary ingredient, nevertheless smaller local enterprises succeed in remaining independent.
In April 1997 I was present during the boiling process of the vanilla in a remote village in the region of Sambava. You cannot imagine the wonderful smell floating over the villages during this time of the year.
